I wasn’t planning on doing anything special for St. Patrick’s Day today, but woke up with some unusual Saturday motivation. This motivation is especially surprising because I’ve been sick all week. I’m pretty sure I have bronchitis, but don’t really want to go wait at the doctor’s office and have them confirm it and also tell me I need plenty of rest which I can’t get and to drink plenty of fluids.
St. Patrick’s Day Green Eggs and Green Pancakes
We started breakfast with some green scrambled eggs. This was as easy as mixing some green food coloring into the eggs.
They look kind of gross, huh? Oh well. It made the kids’ day and Bree asked if this can be a new family tradition.
To make green pancakes, we simply mixed a few drops of green food coloring in with the batter.
How’s that for an impromptu St. Patrick’s Day celebration?
By the way, have you ever tried adding fresh blueberries to your pancakes? They are the best! The kids don’t like it (they’ve never tried it, but refuse to because it is different), but I love it. I just add blueberries after I pour the pancake batter on the griddle. The blueberries get warm and juicy and when you cut into the pancake the berries burst with flavor. It is divine.
