Oreo Cupcakes

June 11, 2012 by Camille 6 Comments

I like Oreos. I like cupcakes.  I really, really like Oreo cupcakes.

For this recipe, I used the recipe I shared for my Chocolate Peanut Butter Cupcakes, which was adapted from Picky Palate.

Chocolate Oreo Cupcakes Recipe

Ingredients

  • 1 Box Chocolate Cake Mix
  • 4 Eggs
  • 1/2 Cup Canola Oil
  • 1/2 Cup Water
  • 8 oz Sour Cream
  • 1 Small Box Instant Chocolate Pudding Mix
  • 1 Bag (2 cups) Chocolate Chips

Instructions

Preheat your oven to 350 degrees F.  In a large bowl or stand mixer, combine the cake mix, eggs, oil, water, sour cream, pudding, and chocolate chips.  Mix until well combined.  The batter will be think.

Put an Oreo cookie in the bottom of each cupcake liner.  Scoop the cake batter into cupcake liners.  I usually use a 3 tablespoon cookie scoop to measure the batter so the cupcakes come out evenly, but with the addition of the Oreo cookie in the bottom of the liner, I used a little less than the 3 tablespoon scoop so the cupcake didn’t overflow.  I recently bought the OXO large scoop on Amazon and love it.  Cooke for 20-25 minutes until cooked all the way through.

Cream Cheese Frosting Recipe

Ingredients

  • 1 8 oz Package Softened Cream Cheese
  • 1 Stick Softened Butter
  • 1 32 oz Bag of Powdered Sugar

Instructions

Place the cream cheese and butter into a mixing bowl and beat on medium speed until smooth.  It is important to make sure the cream cheese and butter are soft so they will combine well.  Slowly add powdered sugar until the frosting is a good consistency.  If the frosting gets too thick, you can add some milk to help soften it up.

Cupcake Topping

Ingredients

  • Wilton Cookies and Cream Brownie Crunch Sprinkles
  • Mini Oreos

Instructions

Sprinkle the Wilton Cookie sand Cream Brownie Crunch sprinkles on top of the frosting.  Add a mini Oreo.

Another yummy cupcake recipe!  Of all of the cupcake recipes I’ve made recently, these Oreo cupcakes were my son’s favorite recipe.

Enjoy!
